Per a customer the cook fixed a chicken salad and when the waitress went to take it out the chicken was raw. The waitress took the salad back to the cook who took the chicken out of the salad placed it on the grill, cooked it till it was done then put it back on the original salad that the raw chicken had been taken off of. They were handling raw foods, chicken, beef, bacon, bare handed and then made sandwiches without washing hands or putting on gloves. please check out thank you

CALLED THE STORE THIS MORNING (1/25/2008) AND SPOKE WITH THE GENERAL MANAGER, WEST. INFORMED HIM OF THE COMPLAINT AND ADVISED HIM ABOUT NO BARE HAND CONTACT WITH READY TO EAT FOOD, FOOD BEING IN THE POSSESSION OF THE CUSTOMER, AND SAFE FOOD HANDLING. ADVISED THAT I WOULD BE FOLLOWING UP ON THIS COMPLAINT WITHIN THE NEXT COUPLE OF DAYS OR WEEK (WHICH WILL BE THE SCHEDULED INSPECTION). IF THE ACTIONS OF THE COMPLAINT IS OBSERVED, THE STORE WILL FAIL AND FACE POSSIBLE ENFORCEMENT FOR CLOSURE IF THIS BEHAVIOR CONTINUES. WEST STATED THAT HE WILL HOLD A MEETING WITH HIS STAFF (COOKS AND WAITRESS) AND GO OVER SAFE FOOD HANDLING IN ADDITION TO THE OTHER THINGS NOTED IN THE COMPLAINT TO ENSURE THE NOTED BEHAVIOR OF UNSAFE FOOD HANDLING IS NOT REOCCURRING. FOLLOWED UP ON COMPLAINT 02/12/2008 DURING THE SCHEDULED INSPECTION. DISCUSSED PROPER FOOD HANDLING WITH THE LINE COOK ON DUTY AND SHE IS KNOWLEDGABLE OF SAFE FOOD HANDLING. ALSO WESLEY MET WITH THE LINE COOKS TO ENSURE THEY ARE AWARE OF PROPER FOOD SAFETY.
