Hello my name KateLynn Vedder. I have recently quit Denny's here in gulfport. There are several reasons I decided to quit, but most of those are not your jurisdiction. The one that is though is a big concern of mine. I was working as a over night server. I repeatedly kept having to go through the whole place( except the grill line) and change out container's, make sure items were not spoiled, and put labels on thing's because literally no one else did it but me and one other new manager. We had a ranch container recently get shoved to the back and left there. There was no label on it so we had no clue how long it had been there. Turns out it was expired an they had found out only because someone served it to a guest. I've even had a table stop eating halfway through their meal and run to the bathroom and get sick because once again there was no label, that time it was from the vanilla pudding that goes with the banana pancakes. The managers do not even make sure that the employees even change out the containers on every shift like we are supposed to. On Thursday March 28th I worked another overnight shift. By 5 a.m. I had a list of everything that would need labels. I got the labels when the morning manager got to work. She wanted me to hurry up and get off the clock( because I had spent all night doing the crap no one else wants to do) and told me to just roll silverware. I said ok, assuming she would either put the new labels on herself or have one of my co-worker's do it. When I finally got to work that evening I noticed that none of the labels had been updated.... I was beyond livid. There is no reason as to why the labels are still the same. I have waited several time's which ended up being week's for someone else to take the initiative and change container's, update label's, and check on the quality of the food product being stored. If they know that the inspection people are coming they are of course on their "on top of it", even when the manager's tell them to do it they never do. Don't even get me started on what the cook's do or well don't do. I'll only say one. They go several shift's and do not even send the egg pan's, or egg utensils to be ran through the dishwasher. We keep the scrambled egg mixture in a metal container in the cooler on the grill line and I honestly can't even tell you how many time's the cook's just pour more in after it had been used all day. To me there are just some things you don't do. I know I do not want to make anyone sick or have a bad experience, but it seem's like unfortunately as long as it is not them they don't care. I have plans to open my own restaurant one day and the more place's I work at the more I am disgusted with the lack of care for the safety of other's. Also on your next visit to Denny's you might want to inform your inspection person to not take their shit about how they do not have to have labels on the tea's because you actually do it is a item that has to be made and stored in a container for use, and has a hold time of 4 hour's. I have worked in several different state's and none of them got away with it. Plus they still serve the tea when it has gone bad. Several guest have to complain before a new batch has to be remade. I hope you can do something about this because people need to know what their actually getting when they sit down for a nice meal at Denny's. Sincerely, KateLynn Vedder a disgusted former employee. In reference to complaint: Almost everything in facility was labeled correctly. Observed pico, ranch dressing in a plain container, and a few containers of pancake batter that were made this morning and not labeled. Those were immediately labeled during inspection. Asked the cook about how often food containers on the cook line were washed. He stated at every shift. All containers should be changed out when food is empty or at least every 4 hours.
