Incident Date: July 5th Observed Violations: Pork section temperature: 50°F Pies temperature: 48°F Health Code Requirement: Time and temperature control for safety (TCS) foods must be maintained at or below 41°F to prevent bacterial growth. Recommendations: Discard all pork and pies that were at unsafe temperatures. Ensure coolers are functioning properly and are at the correct temperature before refilling. Implement a protocol for regularly monitoring and documenting cooler temperatures. Incident Date: July 7th Observed Violations: Bacon temperature: 43°F Sausage temperature: 48°F Milk spilled in the cooler Two broken thermometers in use Health Code Requirement: TCS foods must be maintained at or below 41°F. Proper functioning thermometers must be available to accurately monitor temperatures. Recommendations: Discard sausage due to clear temperature abuse and consider discarding bacon. Clean up milk spills immediately to prevent contamination. Replace or repair broken thermometers immediately. Verify temperatures with a calibrated thermometer to ensure accuracy.
