Complaint of warmed over egg rolls, extreme undercooked mystery steak/onions/peppers and sour smell shrimp/chicken mix.

Went to facility for complaint inspection. Observed cooking temps to be well above 165 degrees. All cold holding temps were correct. Food appeared to be in good condition. Did not observe any sour odors. A few items were below 135 on buffet line and this was corrected. 1. Observed personal drinks, gum, and fly swatter on prep surface at sushi station. 2. Observed floor fan blocking hand washing sink at cook line. (close to ice machine). 3. Observed 3 shrimp dishes and 1 pepper steak dish on hot bar below 135 degrees. Ranged from 90-113 degrees. Foods are being double-panned. 1. Corrected- All were removed from surface. This was discussed at last inspection. Make sure this is not a repeated violation. 2. Corrected- fan was moved so sink is easily accessible. 3. Corrected- foods were placed in single pan. Do not double-pan foods on buffet so temps will stay above 135 degrees..
