Received complaint that after eating at the facility on 01/02/26 around 6:00pm and later he became ill. Caller stated that he ordered and ate a grilled chicken sandwich with hashbrowns and had a glass of ice water. Caller stated that the sandwich did have tomato, onion, and lettuce on it but he only ate the chicken and bread. Symptoms were explosive diarrhea and a extreme high fever. Caller did visit a doctor on 01/05/26 and was diagnosed with Campylobacter.

I am clearing this complaint; however, all employees need to be 100% educated on internal temperatures and be able to demonstrate knowledge of internal temperatures for pork, beef, poultry, and eggs including other covered commodities as far as plant foods are pulled. Corrective Action: corrected instructed person in charge and staff to probe all meat, eggs, and poultry prior to serving and sanitizing the probe every time it is used. Educated person in charge and staff on internal temperatures for poultry, eggs, beef, and pork. Emphasizing correct concentrations for sanitizers and use of to prevent cross contamination to prevent foodborne illnesses. Campylobacter is primarily caused by undercooked poultry and that was strongly emphasized during the inspection. I inspected and inquired about proper equipment adjustment regarding the grill, and it was up to temp. Cold holding was 41 degrees, and I inspected all internal temperatures of the food being served. I asked knowledge-based questions regarding internal temperatures prior to leaving.
