WALKED THROUGH KITCHEN WITH LUIS, MANAGER, WHILE HE EXPLAINED THE PROCESS FOR PREPARING THE SALSA AND STEAK FAJITA. OBSERVED TOMATOES USED FOR FAJITAS STORED OUT OF TEMP ON THE PREP TABLE. TOMATOES WERE SLICED THIS MORING BEFORE 11AM OPENING (NOW 3PM). TOMATOES ARE IMMEDIATELY PLACED ON ICE. ADVISED ONCE TOMATOES ARE SLICED THEY MUST BE HELD COLD, 41 DEGREES. ASKED IF ANYONE WAS ILL AND LUIS REPLIED NO. NO EVIDENCE OF MISHANDLING OF FOOD. ADVISED TO CONTINUE PRACTICING SAFE FOOD HANDLING.
