Caller said they have food displayed for consumption right on the bar. not on a platter, not under the sneeze guard, right where everyone could touch it or cough on it. said she talked to the server, and they told her "that's how the manager/chef(gave a name) wants it displayed".

I discussed complaint with chef on duty. I observed pizza station with olives, sauteed onions, squash, zucchini, peppers. I observed the buffet area, all food was protected. I discussed with the chef-cantaloupe once cut is potentially hazardous, must be held at 41 degrees and below/if time is used as a temp control discard 4 hrs of less, if on buffet longer must keep temp log charts. If special kiosks are set up must have attendants.
