The kitchen is filthy. There is mold in the french fry dispenser. The cooler has mold and mildew. There is yellow grease build-up on the wall behind the fryer. Employee placed raw meat on bun, the customer brought the sandwich back several times. The meat had hair on it.

I discussed complaint with mgr on duty. I observed both french fry storage bins, both bins were clean. The wall behind the fryer was clean. I observed grease spillage inside fryer. Mgr stated it will be cleaned tonight. I observed build-up on cooler shelves. Mgr will clean tomorrow. Mgr stated once food is cooked, it is held in warmer no more that 45 minutes. Amount of food served after 2 pm is decreased to 1 pan of fry/each kind of meat. Hot holding temperatures observed large beef 154 and small beef 175.
