UTILIZING HACCP TECHNIQUES FRESH CHICKEN RECEIVED FROM KROGER WAREHOUSE; PLACED IN WALK-IN COOLER; TEMPERATURE AT TIME OF INSPECTION 39. COOKING CHICKEN RANGED FROM 185 TO 191. HOT HOLDING UNIT HAD NO CHICKENS IN IT AT TIME OF INSPECTION.LEFT OVERS AFTER 4 HRS. THROWN AWAY . CRITICAL CONTROL POINT WAS COOKING WHICH WAS IN COMPLIANCE. DOCUMENTATION SHOWS ON 2/23/9 COOKING, AND HOT HOLDING IN COMPLIANCE. ALL DATES IN TEMP. CHARTS INDICATE COOKING AND HOT HOLDING ABOVE 165 AND 135 BY CONSDERABLE AMOUNT. COVERED WITH STORE GEN MGR. AND DELI MGR IN CHARGE COMPLAINT AND THE IMPORTANCE OF COOKING ALL PARTS OF CHICKEN ESPECIALLY ANY RED PARTS.
