Complaint made that woman and her daughter ate at Pericos 6pm 10/12/10. The woman became sick at 5am 10/13/10 with stomach cramps, diarrhea, and nausea. She had eaten a chicken enchilada, rice, and beans. The daughter had a cheese quesadilla and rice and did not become sick.

Went to facility and spoke to manager and another employee. They both stated they have not noticed any employees with any symptoms of illness. I checked the temperatures of different food items during hot holding, cooking, and cold holding. Also discussed different procedures with the manager. Food is made every day. Beans are usually made the night before and used the next day. Beans are reheated in a pot on the stove to 165 and then placed on steam table for hot holding. Observed 6 pans on beans in the walk-in cooler cooked the night before above 41 degrees. 2 pans were 49 and 4 pans ranged from 63-67. This was corrected and the beans were voluntarily discarded by the manager. We discussed cool down procedures. 135-70 in 2 hours, then 70-41 in 4 more hours. No other complaints have been called in.
