Today I saw one of the chefs hitting the wall at something in the kitchen work area that was facing the tables. He hit and killed something and it fell on the floor. He didn't pick it up, but just pulled off his gloves and washed his hands, recloved and went back to work. When I asked him what had he just kill, he said "a roach", smiled and kept working. I saw that this restaurant was just inspected and received and A. I'm not sure if I should expect roaches at all establishments or not.

COVERED IN DEPTH WITH MGR. PEST CONTROL ARRIVED,VOLUNTARILY. WHEN I SHOWED UP; INDICATED TO THEM NEED TO CONCENTRATE ON SEALING HOLE AROUND ELECTRICAL IN THE BACK; CLEAN AND KEEP LID ON DUMPSTER; IF EXTERIOR DOOR WHICH IS OPENED FOR SUCH THINGS AS DELIVERIES FOR ANY LENGTH OF TIME THE INTERIOR DOOR SHOULD BE SEALED AT BOTTOM. MAKE SURE TO CLEAN BEHIND ALL KITCHEN EQUIPMENT. KEEP INTERIOR GARBAGE CANS SEALED EXCEPT IN CONSTANT USE. PLACED SEALED BAGS IN DUMPSTER. NOTE THERE IS PICK-UP EVERY DAY. DRY STORAGE HAS SEALED CONTAINERS BUT CONTINUE TO MONITOR PRODUCE AS WELL. ALSO USING QUAT SANITIZER FOR TABLES GOOD- STATED THEY USE HICKORY FOR COOKING UNDER PIZZA OVEN. MONITOR THIS AREA AND WHEN WOOD IS IN BACK EXTERIOR AREA THOROUGHLY CHECK AND IF ANY INSECTS PRESENT;ELIMINATE THEM. AT TIME OF INSPECTION DIDN'T OBSERVE ANY ROACHES.
