CUSTOMER STATED THAT THEY BECAME ILL AND HAD TO GO TO THE HOSPITAL AFTER EATING A SPICY CHICKEN SANDWICH, FRIES, AND COKE. THEY STATED THAT THE SANDWICH WAS NOT COMPLETELY COOKED AND WAS COLD WHEN THEY BEGIN TO EAT THE SANDWICH. THE SANDWICH WAS RETURNED AND REPLACED WITH A WELL COOKED MEAL. THE PAST INSPECTION 10/28/2010, THE FRYERS WERE NOT FUNCTIONING PROPERLY.

WALKED THROUGH THE RECEIVING, STORING, COOKING, HOLDING, FINISHING, AND SERVING PROCESS OF THE SPICY CHICKEN SANDWICH. MANAGEMENT DEMONSTRATED COOKING, HOLDING, AND SANDWICH PREP. NO EVIDENCE OF HAZARDS OR UNSAFE FOOD HANDLING OBSERVED. PRODUCT IS RECEIVED FROZEN AND STORED FROZEN. TWO TO SIX CHICKEN PATTIES ARE COOKED TO A MINIMUM OF 165 OR HIGHER (THE CHICKEN PIECE COOKED FOR DEMONSTRATION WAS FRIED TO 214 DEGREES), THEN HELD IN THE WARMER FOR AN HOUR. THE TIME IS DOCUMENTED ON A HOT HOLD CHART ABOVE THE FRYER OF WHEN PRODUCT IS TO BE DISCARDED. BEFORE CHICKEN SANDWICH IS DRESSED, IT IS REHEATED AND TEMPED. OBSERVED FRYERS WORKING PROPERLY TODAY. ADVISED TO ENSURE EVERYONE CONTINUES TO PRACTICE SAFE FOOD HANDLING DAILY.
