This place was just nasty. Vegetables and cheese was all on the counter. One of the ladie worker did not even wash her hands she just came back from eating and just put on her gloves infront of us. The trash cans was so full that I say discarded food at the top. They use the same knife that they cut the sub with to cut open a package of black forest ham, did not wash it or nothing just put it back to keep using it.

I observed facility employee's working with hands on, I did not observe any priority item violation. I addressed all possible priority item violation by giving the manager on duty food regulations that pertained to each individual violation: 3-304.14 Wiping cloths, use limitation, 3-304.11 Food contact with equipment and utensils, 3-304.12 In-use utensils, between-use storage, 2-301.11 Clean condition, 2-301.12 Cleaning procedures, 2-301.14 When to wash, 2.301.15 Where to wash, 2-401.11 Eating, drinking, or using tobacco. I strongly encouraged food employee's to comply with all food regulation in basic form do what you know and do what you are tolded. Documentation that food employees acknowledge that they have received training in: (a) The risks of contacting the specific ready-to-eat foods with bare hands, (b) Proper handwashing as specified under § 2-301.12, (c) When to wash their hands as specified under § 2-301.14, (d) Where to wash their hands as specified under § 2-301.15, (e) Proper fingernail maintenance as specified under § 2-302.11, (f) Prohibition of jewelry as specified under § 2-303.11, (g) Good hygienic practices as specified under §§2-401.11 and 2-401.12;
