She and Husband ate at buffet on 4/5 @ 7-8pm. Both ate crab legs, he had gumbo, rice, broccoli and green beans, became ill around 7am on 4/6. Symptoms are fever, nausea, diarrhea

Inspected buffet around 2:30pm, 742 covers were served at dinner on 4/5, and total of 1013 ate in the buffet that day. Gumbo is cooked in batches of 30 gals, it is cooked every day or every other day. It is poured in to 4" pans to cool. Then heated in steamer and held on steam table for line service. No gumbo was in production at time of inspection, gumbo in walkin was 36F-38F from this AM production, gumbo on steam table was 176F, and 189F on serving line. Rice is cooked as needed, hold 1 pan max in hot holding unit. Rice was 153 holding box and 165F on serving line. Rice is not cooled down, it is discarded. Broccoli is not a daily menu item, none present today. Green beans cooked in steamer, cold holding was 36F, hot holding on serving line was 145F-163F.
