Recieved complaint of roaches and maggots in kitchen. Also, the facility is not being cleaned on a regular basis Full inspection is due > Facility is closed on Mondays and staff was pressure washing kitchen florrs- did not do full inspection at this time. * Observed several liver crawling roaches throughout the facility- too many to count. * Observed unprotected food source ( bread) with presents of pest and mist from pressure wash. * Observed 2 burner cook top on floor - used for cooking large pots > spoke to T. on phone about observations and complaint. He stated that he was doing in house pest control. Advised that his method was not working and he needed professional pest service. > Advised that burner cannot be used for cooking apparatus. all cooking must be done under hood , 6 " or more off floor and with in fire code. Will allow them to clean and will follow up 7/31/2012 follow up 7/31/2012 Returned to facility for follow up and full inspection observed several crawling roaches in kitchen- too many to count Observed dead roaches in upright reach in Observed no soap or towels at the handsink Observed container of food product ( minestrone) with thick layer of mold and dead large tree roach. Observed walk in cooler not cold holding: pasta 56-58F, Minestrone 56F, roast beef 56F, meat balls 58F- advised cannot serve any of the cooked foods to the public placed on risk control plan and advised that everything in kitchen needs to be detail cleaned and sanitized- seal all holes. received copy of pest service contract from Bay Pest Service. Will follow up on 8/10/2012
