PERFORMED AN INSPECTION ALONG WITH MANAGEMENT. DID NOT OBSERVE ANY RAW OR COLD FOOD IN HOT BOX OR ON BUFFET. FOOD OBSERVED HOLDING PROPER HOT HOLDING TEMPERATURE OF 135 OR HIGHER. NOTED THAT THE BACK OF HOUSE IS IN NEED OF A DETAIL CLEANING. FRONT OF HOUSE WAS OK. OBSERVED ONE OF THE FOUR DOORS ON THE HOT BOX DAMAGED (SEVERELY TORN GASKET) AND NOT SHUTTING PROPER, LEFT SLIGHTLY OPEN. TEMPS IN HOT BOX ARE GOOD, 135 AND ABOVE. ADVISED TO FIND A WAY TO SECURE THE DOOR SHUT UNTIL REPAIRED OR REPLACED. ADVISED TO DO A DETAIL CLEANING OF KITCHEN/BACK OF HOUSE. WILL FOLLOW-UP 10 DAYS FROM TODAY FOR CORRECTIONS.
