InvestigationHistory
Inspector out on sick leave April 11 thru 15. Went to facility to inspect for complaint. Facility was closed and a note on the door stated that they would reopen on Monday the 21st. Will retry then. 04/21/2014 - Went to facility to follow up on a complaint for this restaurant. This is not a buffet set-up; you order your food and they prepare it when it is ordered. There was no food left from the date that the person became ill. However, I did talk to owner/manager about preparation processes. Temperatures: walk-in cooler: cooked chicken @ 40F, cooked shrimp @ 60F (cooling down in ice; were cooked 35 minutes earlier) raw food prep table: shrimp prepared for coconut shrimp @ 38F, chicken @ 38F cooked food prep table: cooked egg rolls @ 39F, cooked cubed chicken @ 39F, cooked shrimp @ 40F soup holding area: egg drop soup @ 165F rice cooker temps: fried rice @ 148F, white rice The coconut shrimp is a raw shrimp product that is rolled in coconut and held in the prep table until it is ordered. The fried rice is made fresh everyday and any leftover at close of business is discarded. They sometimes have to make 3 batches a day. The same is true for the white rice. Soups are also discarded at the close of business each day. The only items that are made in advance and cooled to be reheated for service are egg rolls, fired cubed chicken, plain steamed shrimp, and boiled chicken that is shredded to put into orders. All items in the coolers were marked with discard dates that reflected they had been prepared today.
