CUSTOMER PURCHASED 2 TURKEY NECK MEALS AND 1 SHRIMP PO-BOY. THE SON OF COMPLAINANT AT THE PO-BOY AND 3-1/2 HOURS LATER BECAME VERY ILL. NO ONE ELSE GOT SICK FROM TURKEY NECKS. COMPLAINANT PHONED STORE TO REPORT ISSUE AND THE LADY THAT ANSWERED PHONE HUNG UP SO THEY WENT TO THE STORE AND THE PERSON IN CHARGE WAS NOT CONCERNED SO THEY LEFT.

UPON INSPECTOR ENTERING THE KITCHEN OF LUCKYS OBSERVED COOKED SHRIMP, LIVER, AND GIZZARDS IN HOLDING WITH TIME DOCUMENTED. PRODUCTS WERE COOKED AT 11AM, IT IS NOW 1:25PM. OBSERVED TIME RECORDED FOR THE CRAWFISH AS WELL. GLOVES ARE BEING USED DURING THE VISIT. OWNER STATES THAT SHE COOKS AND PLACE SHRIMP, LIVER, AND GIZZARDS OUT BY 11AM DAILY AND COOK MORE ONCE ALL IS SOLD OR AT THE END OF 4 HOURS WHICHEVER COMES FIRST. WHEN AN ORDER IS PLACED SHE DROPS THE ITEM BACK INTO THE HOT FRYER FOR A FEW SECONDS TO HEAT. SHE COOKS BATCHES OF THE NAMED FOOD ITEMS 3-4 TIMES A DAY DEPENDING ON HOW BUSY IT IS. ADVISED TO ENSURE HANDS ARE WASHED IN BETWEEN CHANGING GLOVES AND TO CONTINUE RECORDING THE TIME AS WELL AS PRACTICING OTHER FOOD SAFETY PRACTICES.
