Hours of salad bar are from 9am until 630pm. Salad bar is broken down at night everything except pickles, peppers, olives, and okra is discarded. In the morning food items are placed on a cart (which stays in walk-in cooler) then wheeled to the prep area for cutting. Items are then placed in the salad bar service line. Any food items that doesn't fit on bar goes back into walk-in cooler. The entire process takes about two hours. Dressings are all commercial (arrived at room temperature) and are opened as needed then poured into containers for the bar. Walk-in cooler= thousand island 44F, Italian 43F. Salad bar=thousand island48F, ceasar43F, french46F, house46F, ranch45 F, pasta46F&44F. cut tomato43F, diced eggs40F, diced chicken48F, diced ham46F, potato salad45F&43F.
