writer had 5 complaints: 1-food is transported in back of open truck and is uncovered where birds and flies get in it 2-pork is put on Muslim peoples' trays 3-Menu is not changed daily 4-the 'beef' in beef stew is just chunks of fat 5-several (specific) units are infested with roaches and vermin

phone call to Superintendent Lee -not available, so spoke with Valley GM onsite. He addresses each of the food safety claims ( food quality complaints are not address by MSDH), saying that during transportation to units, the food is in a truck, and is covered with plastic wrap in addition to a stainless steel lid; said he was just in the indicated units this morning, and did not observe any pests -they also have regular pest control contractors; he added that since they grow many of their fresh produce, that sometimes bugs are found in those products, but that they are in compliance with the FDA guidelines for foreign matter. In addressing the pork/religion issue, he said that they go over and above what the courts (from a lawsuit) have ordered; the order was to OFFER pork no more than twice daily -the MS prison systems offer pork on more than twice MONTHLY by policy.
