ATE PULLED PORK FROM THE HOT BAR AT 9PM, WOKE UP AROUND 5AM NEXT MORINING WITH TOMACH PAIN AND DIARRHEA. THE PORT WAS TACKED WELL ABOVE THE RIM OF THE PAN ON THE HOT BAR. FED THE LEFTOVERS TO HIS DOG AND THE DOG GOT DIARRHEA.

CHECKED FOODS ON HOT BAR AND ALL TEMPS ARE 135 AND ABOVE. ONLY ONE FOOD ITEM IS OBSERVED ABOVE THE RIM (TURKEY LEGS) IN FOIL ON TOP OF RIBS, HOLDING AT 156-160. PULL PORK OBSERVED WELL BELOW RIM HOLDING AT 150. ADVISED TO KEEP FOOD ITEMS BELOW RIM OF PANS TO ENSURE PROPER HOT HOLDING OF 135 AT ALL TIMES.
